Caldo Verde (Easy 3-Step Soup)

One of my favourite winter soups- any green veg will do!

Vegatables used

Leafy Greens, Potato, Garlic and Onion


1- Chop and lightly sweat a couple of onions and garlic in some olive oil

2- add a medium sized chopped potato and cover with water or stock; I use boullion powder.

3- When the veg are soft, liquidise, then return to the pan and add finely chopped greens of your choice; put in as much as you fancy, season to taste, cook till soft and eat! Only a few minutes preparation!

I had to go all the way to Portugal to discover a delicious and easy soup, using any greens you like- excellent with finely chopped kale
